Crunchy Caramel Apple Pie

I got this recipe from Good Morning America years ago. It takes a little work but is well worth it!

Ingredients

Pie ingredients

  • 1 Pie Crust Homemake or store-bought
  • 1/2 Cup Sugar
  • 3 Tbsp All-purpose flour
  • 1 Tsp Ground cinnamon
  • 1/8 Tsp Salt
  • 6 Cups Thinly sliced peel apples I like to use fuji or golden delicious
  • 1 Recipe - Crumb Topping
  • 1/2 Cup Chopped pecans Optional
  • 1/4 Cup Carmel topping

Crumb Topping

  • 1 Cup Packed brown sugar
  • 1/2 Cup All-purpose flour
  • 1/2 Cup Quick cooking rolled oats
  • 1/2 Cup Butter I use the salted butter

Instructions

Crumb Topping

  • Stir together brown sugar, flour and rolled oats
  • Cut the butter in until the topping is like course crumbs, set aside

Pie

  • In a large mixing bowl, stir together the sugar, flour, cinnamon and salt
  • Add apple slices and gently toss until coated
  • Transfer apple mixture to pie shell
  • Sprinkle crumb topping over apple mixture
  • Place pie on a foil lined cookie sheet (it usually bubbles over) to prevent drippings in the oven
  • Cover edges of pie with aluminum foil
  • Bake in a preheated oven 375 degrees for about 25 minutes. Then remove the foil and put back in the oven for another 25 to 30 minutes
  • Remove from oven. Sprinkle pecans over the top then drizzle the caramel all over
  • Cool on a wire rack and enjoy!

Notes

I like to cook the pie shell in the oven prior to mixing the ingredients for the pit.  I line the pie shell with parchment paper then weigh it down with dried beans.  I cook it at 400 degrees for about 10 minutes then remove the parchment paper and beans.  If the bottom does not look very cooked I put it back in the oven for about 5 minutes.
This prevents the crust from getting mushy as the pie sits.
